Hi again! Thank you for sharing your results and recipe! I like the idea of leaving the fruit overnight in sugar -- that must concentrate the flavors even more. Regarding the color, my fiancé is an agronomist, and he confirmed Janet's hunch that the level of blush you get depends on the variety of quince.

It turned out well (tasty) but not very pink. I asked my in-laws what they do (they're Spanish). They said the peel them, core them, and weigh them. They then add the same weight in sugar and leave them together overnight. "Van soltando agua" and then you cook them like that, in the sugar/sugar water for 45-60 min.

Cool to see this! We had a funny interlude at a restaurant in Morocco, where one of the Americans at the table thought he'd ask for a doggy bag just to see what would happen. Hilarity ensued. The waiter genuinely thought he was making a joke about how large the portion was, and how little of it he could eat. Ah well.

Hi Janet -- I was wondering the same thing about color. This batch indeed turned out more amber than pink. It could be the variety, or perhaps degree of ripeness...The flavor was good, but the color not quite as vibrant as I expected. This calls for further experimentation!

Did your quince paste turn out pink? I still don't know why sometimes it's pinkish and most times it's amber. Variety of quince?
